Macarons are widely believed to have been brought to France by Catherine de Medici (Milan, Italy), the Italian noblewoman who married King Henry II of France in 1533. She is said to have brought with her her Italian pastry chefs, who introduced the Corte French macaron.
Although the macarons Catherine de’ Medici enjoyed were probably simpler cookies made from almond flour, sugar, and egg whites, the recipe evolved over the centuries. The macaron as we know it today, with a filling sandwiched between two delicate meringue cookies, was refined in France.
The modern macaroon is often attributed to Pierre Desfontaines, a relative of Louis-Ernest Ladurée, founder of the famous Ladurée pastry shop in Paris. At the beginning of the 20th century, Desfontaines had the idea of sandwiching two meringue cookies with a creamy ganache filling, creating the iconic Parisian macaroon.
Ladurée and other Parisian pastry shops popularized the macaroon and it became a symbol of French pastry art. The combination of textures – a crunchy shell with a chewy interior and a soft, flavorful filling – captivated pastry lovers around the world.
